Thanksgiving: A Lot to be Thankful For

Chris and I were extremely blessed to have some visitors for Thanksgiving!  Aunt Cindy flew in Tuesday all the way from Oregon, and Ty joined us Wednesday from Chicago.  We had a wonderful time preparing Thanksgiving Dinner, we watched movies, saw the sites, ate some famous BBQ, enjoyed a wine tasting, and spent some quality time just hanging out.  I couldn't have asked for a better Thanksgiving week break!

Appetizer: Bacon-wrapped Bleu Cheese Dates


I learned how to properly brine and prepare a turkey!  Lucky for me Aunt Cindy is a pro at the turkey baking business and guided me through the process.  We will see how much I can remember next time around!



Ty got in on the prep work too, helping us chop and peel.  

The oven took some coordinating, as large meals always do.  It was a fun learning experience to calculate and plan out what should go in when and how long it would all take.  It is an exact science for sure!

Butternut Squash (Gluten-free) cranberry stuffing


The turkey turned out perfect and we even had some Gluten-free rolls to go along with it.  Although they were no match for Aunt Lynnette's "nice rolls" lol

The dinner table turned out perfect!  Aunt Cindy made some festive table settings and everything fit!  Haha we had a Moroccan style dinner due to the floor sitting.

The fellas were nice and cleaned it allllll up!  How great is that?!

All the hard work called for a nap, eating is hard.

We also went on a hiking adventure in Giant City State Park.  We were blessed with almost perfect weather and deserted trails.  The boys climbed rocks, jumped across ravines, and threw stumps off cliffs.  The ladies took a more low-key approach and played with our cameras while taking pictures of nature.  Being active is so much fun!


We seriously cannot do anything without Chris picking up heavy objects.  This heavy object in particular found its way into the back of our truck and into the weightroom for some strongman training.  Don't tell the forest ranger.

A final highlight of the visit was our adventure to Walker's Bluff in pursuit of some live country music entertainment.  We had a wonderful time!  Cindy and I tasted wine while the guys met the band while puffin on a fancy cigar by the fire pit outside.  Walker's Bluff is one of my favorite places in the Carbondale area and it was fun taking everyone there to enjoy.
