Garden Progress

Garden update: it is doing very well!  Chris and I have been diligently watering it every day and we are seeing great results.  We had the most delicious kale salad the other evening and we can't wait to taste the tomatoes, cucumbers, and peppers when they are ready!  








The house is also coming to order, however, it is not really decorated yet.  So no updated pictures until it is a little more colorful!

Giant City Park

Hello everyone!  I really hope you are all enjoying the transition from spring to summer and I am praying that all you Oregonians will start getting some sun really soon!  It has increasingly gotten hotter and hotter every day here in good 'ol Carbondale.  Waking up in the morning it is about 75-80 degrees and by midday we are hitting 95s with ease.  Ugggghhhhh soooooo HOT!  Luckily I have had the past three months to slowly adjust and my body chemistry is actually starting to adapt a little bit.  I don't get drenched in sweat when I step outside anymore, however, I have been told multiple times that the intense humidity is on the way and July/August will feel like 115 degrees!  Oh boy.  

Last weekend we had a free day and we decided to make the most of the bearable temperature and the gorgeous day.  We put on our hikin boots and headed for the forest. Giant City Park is part of the parks and recreation department.  They have a bunch of hiking trails, picnic areas, a lodge with a restaurant, and horse trails.  We opted for a quick hike. 



There are the coolest rock formations and cliffs in Giant City!  Chris was practically drooling he was so excited to climb.  All I have heard since then is him making plans to go back with our rock climbing gear and conquer those cliffs.  I am not as enthusiastic because there is no padding underneath...hmmm just doesn't seem like the best idea to me.






The trail was really easy and very well marked - no worries mate!


I decided to try a very non-intimidating bump to climb.  I felt quite accomplished when I reached the top :-)

Chris couldn't of been happier - we were exploring the wilderness and he was in heaven




That boy just loves to climb anything he can, I hope he doesn't pass that onto our children or I will be a nervous wreck.


Monkey see monkey do




On our way home Chris saw a turtle crossing the road.  So naturally we stopped and picked it up to save the little guy from getting smushed. He was actually pretty cute, but I was a little nervous.  I wasn't about to try and pet it and have it bite my finger off!  However, I tend to be nervous about anything that deals with nature and Chris is definitely not.  He wanted to bring it home...but thankfully NO PETS ALLOWED!  Maybe a fish tank, but that is about it.  









Chris had a moment with the turtle as he set it free back in the wild, I'm sure the Free Willy soundtrack was playing in the background as the turtle scurried off into the water. How bittersweet.

Well that was our adventure!  I'm sure Giant City Park will be calling our name again soon among other adventures - so keep checkin in!  XoXo

Farmers Market Carbondale Style

Yay for HIPPIES!!!  I have anxiously been waiting for the farmer's market to open here in Carbondale, and it finally did!  It was delightfully exactly what I was hoping for and it sparked a renewed interest in living the hippie lifestyle :-)  They had all sorts of fresh veggies and beautiful flower plants, it was so hard not to buy it all for the house.  They also had a nice array of local artisans - jewelry, furniture, soaps, and other crafts.  I do believe that the farmer's market is going to be a Saturday morning requirement all summer.





Holy Moly Macaroni!  That is a sweet potato!  Chris was super pumped of course.


VEGGIES!  Hopefully our home made veggies from the garden turn out this well.






Homemade soaps, bug sprays, lotions, and more! 
The main ingredient for most of it was coconut oil - which has an insane amount of health benefits.  If you haven't done so already I would suggest getting some from the store and start using it to cook with instead of olive oil or butter.  It flavors the food a tad differently but your body will love you for it.  Chris and I have turned into coconut lovers.  We also supplement our diet with pure coconut milk (found in the asian food section in a can), mix it in scrambled eggs, put it in coffee, or add it to your shake.

Alright, if we made it to the farmer's market I challenge everyone else to go to their local one tomorrow!  If not for some fresh veggies or flowers, at least it is a good reason to get up and start your Saturday right with a fun and different activity!  Enjoy <3
