The Month of May: Honeymoon

The Roth family got to go on our first ever week-long vacation!  While we were extremely grateful for the opportunity to get away to Eagle Crest for a few days after the impromptu wedding, it did not quite feel like a full honeymoon.  (Probably because we were like "um what just happened"...."wait are we married now for real?" the whole time)  So fast forward three years and voila, trip to the Virgin Islands it was!  We decided on the Virgin Islands because we were able to find some really incredible deals, they spoke English, and no currency change was necessary.  Also, after doing extensive honeymoon destination research we felt attracted to the vibes of the Virgin Islands. Particularly St. Croix which is the largest and least populated island.  Most of the island is protected natural habitat and of the three islands it is the least 'touristy'.

Pre-workout (STL airport)

Our first place of occupancy - Cottages by the Sea
Absolutely adorable, unique, comfortable and quiet
Being ten steps from the most beautiful beach did not hurt either :-)

Seriously gorgeous

Coffee at Polly's at the Pier
A local coffee shop and breakfast cafe with cool vibes and friendly owner

Cottage pet

We went on a tour at the Cruzan Rum factory.  Afterwards we enjoyed some local 'rum punch'

Date night to the Blue Moon Cafe.  My favorite meal on the whole trip!  Mussels with butter cream sauce, jambalaya, and coconut mango shrimp. All on the edge of the Fredriksted Pier!

One morning we got up at 4:00 am to drive to the other side of the island to Udall Point - the Easternmost part of the United States - to watch the sunrise.  This was one of Chris' favorite experiences, and I really enjoyed it as well.  Spent time being in wonder of God's magnificent creation.

We tried paddle boarding...I loved it, Chris tolerated it

It wouldn't be a complete vacation without Chris giving a coaching clinic....right?

We had a great time visiting 340 Crossfit in Christiansted. Cool to meet other gym owners and cross-fitters!  Maybe they will invite us back someday :-)

Lounging on our beach in front of the cottage

Wine and Jazz concert on the waterfront in Fredriksted

For the second half of our vacation we island hopped over to a small island off of St. Thomas.  Water Island is a small island only accessible by ferry. It has no grocery store, police department, or fire department.  And there are only a few cars, most people get around by golf cart!

Riding up to our campsite in the back of the truck

We stayed in an eco-friendly campground.  The "campsites" were very similar to a yurt.  The cross breeze from the ocean kept the 'tent' cool during the day and night.

Exploring Water Island beaches

Found a tortoise by camp!

Honeymoon Beach Saturday night at Dinghy's for an appetizer and Heidi's Beachside Cafe for candlelight beach dinner.

Found another tortoise on the way up to Fort Segara!  Fort Segara is the highest point on the island and it was a gorgeous 360 view.

Of course had to try out the crossfit on St. Thomas as well.  It was quite the adventure finding the place! After two taxi rides we finally made it there. Then after the workout there was a car accident right outside. The road was closed for the afternoon so we decided to go to the local beach.  Well we didn't really think about how in the world we were going to find a taxi to get back.  We must have looked pretty haggard on the side of the road (to be fair it was post workout and laying out on the beach...we were a little grimy lol) because an older gentleman and his brother offered us a ride back into town.

We finished our trip with a chartered sailboat ride out to Buck Island to go snorkeling. We swam with turtles!  Yes I swam in the ocean fully aware that jaws could have eaten me at any moment.  (Rachel 1, Jaws 0)  Needless to say it was absolutely the most perfect way to cap off the most perfect vacation with my most wonderful husband.
